Let's them eat figs!
A perfect pistachio and fig cake
My obsession with figs comes every year, and yes I am happy to spend £1 per item because it is worth it! I think long and hard every time I buy them, trying to think of the best way I can cook and devour them. I made a delicious duck leg casserole with figs and a sweet red wine sauce here and that was pretty spot on!

But if they is one thing I look forward to bake every year when it is fig season, it is my pistachio and fig cake. It is the simplest cake to make, no need for any equipment and it looks just pretty how it is. I like to serve it warm with a touch of cream and extra crispy pistachio on top or cold, with a hot tea.
Pistachio and fig cake
INGREDIENTS
200g soft salted butter
160g caster sugar
3 egg whites + 1 full egg
200g grounded pistachio
80g plain flour
1 tsp baking powder
50g creme fraiche
5 to 6 fresh figs
METHOD
Pre heat the oven to 180C fan oven.
1. Mix the soft butter with the caster sugar then dd the egg whites and the egg and mix well.
2. Add the grounded pistachios (I use a small spice grinder) and mix well. To finish the batter add the crème fraîche, the plain flour and baking powder.
3. Butter a 20cm round dish, and cover the bottom with greaseproof paper.
4. Spread the batter into the tin and add the figs sliced in half on top.
5. Bake the cake for 50 to 1h. Covering the cake with some tin foil half way through the bake to avoid it to burn. Check the cake after 45 min to check (ovens differ)
6. Sprinkle icing sugar and pistachio on top. Serve it with crème fraîche.

I am trying to remember anything interesting that happened this week, but I don’t think there is anything worth sharing haha ! I guess maybe one thing is that I have decided to postpone our kitchen removal to January next year. I just felt like I still had some decisions to make, items to order and decide on, and this coming time is the busiest time of the year for me, so I am very happy with that decision! I decided to go for a different worktop - turns out worktops have a different colour on photos - and it is the thing you can’t change later on! Anyway, apart from this we are 3 weeks into school for Fleur and she is loving it so far. We still get the nearly daily single protest of “I don’t want to go to school” but she is never upset at drop off so I guess it’s just a 4 years old way of saying I am a bit nervous.
